I’m calling it now: this is a very good moment for Scottsdale dining. Not because one new hotel restaurant is making noise, but because three of them are giving the city three different moods to chase. That feels smart, not crowded. It feels like a reason to make a reservation instead of just talking about one.
Ella on the Park brings the heat
At Hotel Solaya, Ella on the Park opened in the spring, and I like the confidence of it. The team was nudged toward a traditional Southwestern restaurant, but executive chef Brian Paskvan had other ideas after years cooking in Texas and New Orleans. Megan Ferreira, Hotel Solaya’s director of food and beverage, puts it plainly: they dropped the “West” and went South.
That choice lands in the food. The menu leans into Southern smokehouse cooking, with pork belly served with Louisiana sugarcane syrup and cornbread purée. That’s the kind of plate that tells you the kitchen knows exactly what it wants to be. No hedging, no trying to please everybody.
Cielito is the rooftop move
Then there’s Cielito inside AC Hotel Scottsdale Old Town, and this one is all about the view and the mood. The setting alone makes it feel like a place built for sunset drinks and a little bit of showing off, in the best way. The food is Mexican, the views are the hook, and together they make a pretty easy case for a night out.
I’m always a little suspicious of restaurants that rely too hard on the skyline, but Cielito doesn’t seem to be asking you to choose between the scene and the plate. It’s both. That matters.
Salt & Sol keeps it poolside and polished
At Hilton Scottsdale Resort & Villas, Salt & Sol goes Mediterranean, but not in a predictable way. The whole idea is an ode to the Mediterranean with a few unexpected twists, and that’s exactly the kind of line that makes me want to see what the kitchen is actually doing. Poolside dining can drift into forgettable territory fast. This one sounds more deliberate than that.
What I like most about this trio is the range. Scottsdale doesn’t get one new hotel restaurant story here — it gets three distinct ones, each with its own lane. Southern smokehouse at Hotel Solaya. Mexican rooftop dining at AC Hotel Scottsdale Old Town. Mediterranean meals at Hilton Scottsdale Resort & Villas.
