I’m into this one. Requinto sounds like the kind of pop-up that earns its buzz the hard way: by feeding people well, week after week, until even the chefs start showing up like regulars. That’s the real tell.

Erick Pineda, the rocker-turned-chef behind Requinto, has been serving pozole, chilaquiles, and other Mexican eats at Linger Longer Lounge for nearly four years, and that alone says a lot. This isn’t some flash-in-the-pan brunch stunt. It’s a steady grind, built in a neighborhood dive with a small kitchen, three days a week. That kind of setup usually weeds out the hype pretty fast.

What I like most is the full-circle feel of it. A simple mission to bring pozole to the people turned into something that clearly landed with locals — and with the Valley’s chef crowd, too. When the people who know food best keep coming back, I pay attention.

So yeah, I’d call Requinto worth your time. Not because it’s loud. Because it’s got that rare mix of personality, consistency, and actual craveability. In Phoenix, that’s the magic trick.
